Mac and Cheese
This basic recipe has been a family favorite for years. . . Start with the basic white sauce, add cheese and pasta. That is all there is to it!
Oven temperature: 350 degrees F.

Ingredients
2 Tbs. butter or margarine, melted |
touch of salt |
2 Tbs. all-purpose flour |
touch of pepper |
1 c. milk |
Additional Ingredients for Cheese Sauce
recipe above for white sauce |
1 tsp. dry mustard |
1 pkg. cheese - shredded, diced, or sliced to melt faster |
salt and pepper to taste |
Directions:
Preheat oven to 350 degrees F.
Melt butter or margarine in a saucepan
Add all-purpose flour
Stir continually over medium heat for two or three minutes. Be careful not to let this "rue" brown or burn.
Add milk, salt, and pepper.
Stir continually until the sauce thickens and coats the spoon.
This basic sauce is the foundation for many other sauces. You can experiment with it by adding various herbs and spices. It is the basis of the cheddar cheese sauce below.

Add 1 package of cheese—shredded or diced or sliced so that it will melt faster
1 teaspoon of dry mustard
Sauce is done when it has thicken and all of the cheese has melted.
This is the sauce that I use for broccoli. It is also the sauce that I use for macaroni and cheese. For macaroni and cheese you will probably need to double the recipe.
