Peanut Butter Cookies

A quick and easy cookie to make.

At one time these were Greg's favorite cookies.

AJ prefered the cookies when they were sprinkled with granulated sugar.

This recipe is from James Beards' American Cookery page 700.

Yield: 4 1/2 dozen small cookies

Oven temperature: 375 degrees F..

Ingredients

 

1/2 c. butter, softened
2 c. sifted all purpose flour
1/2 c. peanut butter
1/4 tsp. table salt
1 c. firmly packed brown sugar
1 tsp. vanilla
1 egg
granulated sugar for the top

 

Directions:

 

Cream the butter and peanut butter.

Cream in the brown sugar.

Beat in the egg.

Sift the flour and salt. Stir into creamed batter adding the vanilla at the same time.

This will make a very stiff dough.

Form into long rolls about 1" in diameter. Cut rolls into 1" lengths. Form each into a round ball.

Place balls on greased cookie sheets. Flatten each ball by pressing on it with a fork, first in one direction and then in the next to make a crisscrossed pattern.

Bake in a preheated 375 degree F oven 9 to 12 minutes or until a delciate brown.

Remove from pans while still warm.
