Basic Griddlecakes

This basic pancake recipe is the one that I used when AJ and Greg were small. AJ particularly liked the fluffy texture of these.

Suggestions: don�t over cook.

Ingredients

2 c. sifted all-purpose flour
2 eggs, lightly beaten
1 Tbs. sugar
1 1/2 c. milk
4 tsp. baking powder
1/4 c. melted butter or oil
1 tsp. salt

 

Directions:

Combine all the dry ingredients and sift into a mixing bowl.

Combine the eggs, milk, and butter (or oil) and stir into the dry ingredients until the large lumps disappear.

Remember that as the batter sits, it thickens. If this should happen while you are baking the cakes, add a little more milk, stirring it in with a wooden spoon or spatula.

To bake, pour the batter on a hot, lightly greased griddle. The cakes should be 4" to 6" in diameter. They are ready to turn when bubbles form and break and the edges seem cooked. Turn, and brown lightly on the reverse side. These are best served with melted butter and hot syrup or honey.
