Grandma's Quick Coffee Cake

This is the coffee cake that Gram used to bake.

It is a good basic recipe. Consider playing around with the topping to add interest.

Yield: 1 9 " square pan (8" would also work)

Description: yummy; moist and dense, light topping

Suggestions: don�t over bake.

First baked: ...don't really know...sometime when I was a child.

 

Ingredients

 

1 c. granulated sugar
1/4 c. butter
1 1/2 c. all purpose flour
1 egg, well beaten
2 tsp. baking powder
1/2 c. milk
1/2 tsp. table salt
cinnamon sugar mixture for topping

 

Directions:

 

Mix dry ingredients.

Cut in butter with a pastry cutter (or you can use two table knives and cross cut).

Add egg and milk. Mix with a kitchen fork. (I like my three pronged Grandma's fork with the wooden handle for this.)

Pat into a buttered pan.

Sprinkle cinnamon sugar mixture liberally over the top.

Bake for 18-20 minutes.

Note: for added texture and flavor, finely chopped nuts or perhaps coconut would be a good addition to the topping. I've never tried it, but I bet a tasty granola would be good too.
